Storage: Keep in a cool place The product consists of anchovies, processed within 24 hours of capture. Anchovy colatura is a product made from salted, headless and gutted fish (Engraulis Encrasicolus) aged for a duration that varies according to climatic conditions but not less than sixty days. The salted anchovies are centrifuged in order to collect the liquid which is then filtered. The product obtained is poured into regularly labeled bottles.
