Anchovy sauce
(Latin name Engraulis Encrasicolus)
The product consists of anchovies, subjected to processing within 24 hours of capture. Anchovy sauce
is a product made from salted, headless and gutted fish (Engraulis Encrasicolus) seasoned
for a duration that varies according to the climatic conditions but not less than sixty days. Anchovies
salted are centrifuged in order to collect the liquid which is then filtered. The product
obtained is poured into regularly labeled bottles.
